The original Tokyo address of Tirpse caused a sensation when it received a Michelin star just two months after opening in 2015. This reputation loaded expectations on the Hong Kong outpost, and it is a testament to the fine quality of the food here that diners feel no need to make comparisons between the two locations. Artistic French cuisine with a Japanese spirit is the ethos across a variety of menus – take your pick from various lunch and dinner menus as well as cake and caviar sets. The staccato style of the menus can seem blunt – "Beetroot. Crab. Caviar." ... or "Beef cheek. Carrot. Red wine." ... – but few establishments can match the waves of flavour served here.
