Renowned chef Michele Dell' Aquila puts sustainability at the heart of his master plan for The Manor. Not only does he use carefully sourced ingredients from around the world, he also casts a spell on his ingredients, transforming them into mouth-watering delicacies, presented in ways that evoke a strong connection to the natural environment. Italian by birth, Dell' Aquila does not restrict himself to the native cuisine of his homeland. Signature favourites include the vibrant vegetable starter Bouquet of Garden, the Glacier 51 toothfish, and Stockyard Wagyu beef rib-eye M6-7 imported from Australia. It's also worth mentioning that Dell' Aquila promotes an eco-conscious kitchen philosophy, and is insistent on using sustainable producers from around the world.
