A clutch of restaurants have opened in Foco in Central, since the lifestyle destination launched in 2022 – to date, none have hit a home run like Sushi Fujimoto. Chef-owner Kenichi Fujimoto eschews the belief that fine dining should be about making dishes increasingly complex and instead embraces "the art of simplicity". Fujimoto earned his chops at the Michelin-starred Sushi Saito and here he offers Edomae sushi. Through minimal use of seasoning, the true essence of each ingredient shines through. Sometimes, simpler really is better.
