The original Shang Palace in Singapore celebrates its 50th anniversary this year. Its 43-year-old sibling in Kowloon is the one with the Michelin star, though. Executive Chinese chef Raymond Wong Wai-man – fresh from over a decade at the distinguished Ming Court – joined the team in 2022 and has ensured the menu stays fresh and innovative. While the flavours are never lacking, special attention is paid to the presentation of dishes. The braised partridge porridge with bird's nest is a luxurious delight, while the Cantonese-style crispy chicken is enhanced by chef Wong's special marinade. The prestigious Chinese tea menu provides some wonderful pairing options worth sampling, including Tongmuguan Jinjunmei, a rare type of lapsang souchong, and Mingqian Shifeng Longjing.
