Not to be outshone by sister restaurant L'Envol, Rùn is the St Regis' Cantonese fine dining establishment. Executive Chinese chef Hung Chi-kwong is a Hong Kong native with more than 30 years' experience. Hung stays true to tradition while incorporating new ingredients and pairings bound to surprise and delight diners. The crispy toast with preserved Chinese sausage, taro paste and shrimp mousse, and the braised superior Kanto sea cucumber with dried shrimp with foxnut seed, are two moreish examples. Vegetarian and gluten-free menus are also available.
