The more things change, the more they stay the same. Even today, 12 years after it first opened, no list of Hong Kong's best bars is complete without Antonio Lai and Tasting Group's flagship molecular mixology concept, Quinary. The menu is still fresh and inventive and, just as importantly, the establishment continues to do an exemplary job of training young bartenders, thereby laying the groundwork for Hong Kong's next generation of mixologists. As ever, Quinary signatures are impressively innovative, both visually and technically. The Johnny B Todde from early last year brings a local twist to the hot toddy with Club de Remy Martin champagne cognac and ginger Puer tea. The more recently whipped-up Gents O'Clock is a savoury delight that sees Bulleit rye whiskey sous vided with dry figs, then combined with Madeira, coffee bean maple syrup and a Campari cream before being smoked with applewood.
