The newest offering from Lai Sun Dining, Plaisance by Mauro Colagreco is a marine-themed restaurant spread across 10,000 sq ft over three floors. The theme is actualised through the shades of turquoise used throughout, various nautical details in the design – a school of fish circles above the entrance and an impeccable selection of seasonal seafood. The restaurant is young but guests have been won over by inventive combinations like the fillet of kinmedai – matured for four days then barbecued with tagetes oil and paired with a rooibos tea-tomato sauce, peach-flavoured tagetes panna cotta and a spicy chilli jam. Demonstrating full commitment to the oceanic theme, dessert comes in the form of a crispy shrimp cannoli and squid ink rice cone.
