Argentinian-born Italian chef Paulo Airaudo has opened acclaimed restaurants all over the world, from the two-Michelin-starred Amelia in San Sebastian, Spain, to Anima in Bogota, Colombia. At Noi, he seeks to "put the fun in fine dining". Interior design motifs here are inspired by the chef's tattoos and favourite video games, while the music is a collection of 90s tunes that he grew up with. The food is described as "Italian omakase" – meaning that dishes feature a mix of seasonal Italian and Japanese ingredients. Highlights include the Australian black abalone with artichoke, and the Sicilian tuna kamatoro alongside Kaviari's Kristal caviar. For those happy to push the boat out, the Japanese A5 Wagyu, and the roasted blue lobster, are well worth digging deep for.
