Helmed by culinary director Olivier Elzer, also of Clarence, L'Envol celebrates quality seasonal produce and reimagines the tastes, textures and techniques of traditional French gastronomy. The 64-seat restaurant is divided into two intimate dining salons separated by a stone and glass screen. Interiors by acclaimed local designer Andre Fu create a dramatic yet welcoming space that's designed to reflect a culinary journey that shifts between Europe and Asia. Don't miss the signature l'oursin d'Hokkaido, which sees Hokkaido sea urchin placed delicately atop prawns and crunchy fennel, and served in a pristine caviar box. And if you have time to wait 60 minutes, order the volaille rôtie aux aromates to enjoy possibly the best whole roasted yellow chicken in town.
