Located on the 51st floor of The Ritz-Carlton, Macau, Lai Heen is led by executive chef Jackie Ho Hon-sing, a 40-plus-year veteran of Chinese fine dining who is highly proficient in bringing Southeast Asian touches to classic Cantonese recipes. Adding a modern twist to dishes and elevating them with exciting new presentations and flavours is what sets Lai Heen apart from many of its competitors. Dinner at this Michelin-starred establishment is a glamorous affair. lt's not bling, though. Lai Heen trades on traditional colours through blue and white porcelain and dark wooden furniture. Soaring windows allow for abundant natural lighting. The five private dining rooms are ideal for celebrations and intimate occasions, while part of the main dining area can be walled off with a movable sliding partition that allows for flexible table arrangements whatever the occasion.
