A lauded restaurant for many years, Epure is going from strength to strength. Chef Aven Lau now leads the kitchen and brings with him experience at the three-Michelin-starred Odette in his hometown of Singapore as well as celebrated Hong Kong restaurants Belon and Batard. The cuisine remains classically French, with fidelity to seasonality and flavour – last year's double-smoked quail was a treasure.
Roast chicken is Lau's signature dish and at Épurehe takes it a step further by adding an extra layer of chicken mousse between the flesh and the skin, granting this classic dish additional finesse while lessening the greasiness. Truly fantastic stuff.
