Jim Löfdahl has been proselytising for Nordic cuisine in Hong Kong since he helped open Frantzen's Kitchen in 2016. After five successful years, Frantzen's closed and Löfdahl took over the premises, launching Embla in 2022. If the older restaurant had more Asian inflections on its menu, Embla is [refreshingly) pure Nordic. Opt for exemplary dishes like gubbröra, a Swedish starter combining smoked eel, pickled herring, eggs, dill, chives and crisp bread; or the hot-smoked trout with winter apple, vendace roe and cinnamon essence. Finish with a lingonberry sorbet served with poached grey pear, cardamom mousse snd a Norwegian brown cheese and oat cookie.
