Dynasty has been a go-to for some of the best Cantonese food in Hong Kong since 1989. Perched over Victoria Harbour at the Renaissance Hong Kong Harbour View Hotel, the
so-called "tycoon's canteen" woos diners with a parade of hits – from its dim sum, char siu, and deep-fried fresh lobster with mantou, to the panfried king scallop with vegetables in gravy sauce. Helmed by executive chef Suen Kam-sing, who brings more than three decades of experience to the table, the team keeps things simple with seasonal wine pairing menus (including sake when we visited) as well as traditional a la carte offerings.
