What regular guests have come to look forward to most, however, are DarkSide's outstanding annual concept menus. Previous menus have been inspired by phases of the moon and mahjong. This year, they've combined contrasting ideas and ingredients to craft a Yin Yang menu. Heaven takes the Ramos Gin Fizz to the next level by presenting it with whisky, Fernet Hunter, corn, biscotti and cream, plus the signature column of froth. Meanwhile, Brightside is a punchy but surprisingly delicate mix of tequila, mescal, Tio Pepe, sesame, pepper, grapefruit and guava soda water.
