Expect classic flavour combinations enhanced by modern techniques and presentations. Although the menus change regularly, look out for the home-made bottoni ravioli with Norwegian king crab; Fassona beef in the shape of tenderloin, tongue, shoulder, sweetbread and chuck; and be sure to end with a selection of Piedmontese cheese. The wine list is mainly Piedmontese and perfectly complements the variety of bold flavours from the kitchen.
