With its three Michelin stars, Caprice remains a yardstick for modern French cuisine in Hong Kong. Chef Guillaume Galliot has perfected an amalgam of classic French dishes enlivened with international accents – take the Brittany scallops served with saffron pistils, celeriac and mandarin gel as an example. But it's not just the food that impresses – service is always spot on, the harbour view a delight and the wine cellar the envy of many an establishment. If the price tags on the connoisseur and signature menus make you think Caprice is for special occasions only, the set lunch is excellent value given the quality and is a wonderful introduction to this institution.
