It's almost three years since Argo took over what was once Blue Bar at the Four Seasons. An instant hit, the establishment led the charge to bring modern culinary techniques to mixology. The concept is currently helmed by Federico Balzarini, who took over as beverage manager some 12 months ago, launching the Argo Forestry cocktail menu. Argo's recent offerings showcase the team's efforts to create cutting-edge flavour profiles. In the new menu's Granite section, the Igneous Gibson delivers notes of char by infusing Grey Goose with granite and combining it with charred pickle vermouth, while the Goat Evolution Flight uses goat butter- as well as Argo's "vegan goat extract" – to wash spirit bases presented three ways, for a graduated drinking experience.
