
For much of the past decade, The St. Regis Bar in Macau has stood unchallenged as the SAR’s most polished bar concept. Even as the competition has heated up, it continues to hold its own with a compelling mix of stellar drinks, refined bites and live jazz. The menu sets the tone, celebrating the hotel brand’s New York origins. The Art of Concoction collection for example, curated by mixologist Kevin Lai, pays homage to the Big Apple while weaving in a little flavour of Macau. It features contemporary techniques such as milk washing for A Day in West Village (gin, pistachio, Rinomato Americano Bianco, sweet vermouth, pear juice) and clarification for the Stonewall Inn (house spirit blend, clarified cucumber juice, spiced Fanta syrup, citrus and candyfloss). The bar’s signature Maria do Leste – a local interpretation of the Bloody Mary – showcases Macau’s Portuguese heritage with chorizo, piri piri and black Chinese vinegar, served with a miniature egg tart.
