
Acclaimed chef Huang Jinghui (the eponymous Chef Fei) brings archetypal Cantonese and Chiu Chow cuisine to The Bay by Chef Fei, located within the Mandarin Oriental Shenzhen. With over 30 years of experience, he offers everything from traditional dim sum to contemporary interpretations of classic Guangdong dishes, using only the freshest seasonal ingredients. The menu bridges Lingnan and Chaoshan culinary traditions through dishes such as crispy eel with osmanthus honey, roasted crispy chicken fried with flax and sesame seeds, and double-boiled fish maw soup. Dim sum lunch is another highlight, featuring top versions of all the favourites, including steamed BBQ pork buns, crispy shrimp rice rolls and crab roe dumplings.
