Since ascending to the rare heights of three-Michelin-star status in 2023, Ta Vie has solidified its place as one of Hong Kong’s most outstanding restaurants. The recognition is testament to chef Hideaki Sato’s unwavering culinary philosophy – “pure, simple and seasonal” – throughout the restaurant’s decade-long history. While Ta Vie’s type of “French heart, Japanese soul” concept is now a familiar one in the city’s gastronomic landscape – having inspired so many to follow a similar path – Sato’s execution remains peerless. Past delights have included Hokkaido crab with Japanese sweetcorn and Cajun butter sauce, and a chocolate crêpe soufflé accompanied by banana-jasmine-meringue ice cream and fermented rice jam.
