Even if cheap flights and a cheap yen have made authentic Tokyo sushiya more accessible than ever, there’s a special draw to Sushi Shikon. The restaurant remains Hong Kong’s only three-Michelin-starred sushi restaurant, an accolade it has held every year since 2014 – testament to its unbelievably high standards. Executive chef Satoshi Tada oversees the eight-seat hinoki counter. Ingredients arrive twice daily from Tokyo, ensuring the Edomae-style omakase reflects what is freshest that day, creating an air of anticipation during the meal. Lunch features a starter, eight pieces of exquisite sushi, soup and dessert. Dinner guests are treated to a full omakase experience, where the menu remains a delightful surprise.
