
After The Dining Room by BluHouse failed to catch on, this space was transformed into Marmo Bistro and is all the better for it. Marmo is, surprisingly, the Rosewood’s first dedicated French concept, marrying Belle Époque-style decor with the warm, convivial atmosphere of a Parisian neighbourhood bistro – no mean feat in a hotel as fancy as this. The menu consists of reimagined French classics courtesy of chef de cuisine Giovanni Galeota. Think seasonal dishes built around premium meats, fresh seafood and a solid wine list that nods to the traditional French flavours Galeota is fond of. Signature starters include home‑cured foie gras torchon with fig chutney and toasted sourdough, alongside gratinée à l’oignon topped with broiled Gruyère and Comté. Mains such as seared Dover sole meunière, Marseille‑style bouillabaisse and côte de bœuf à la Bordelaise show the restaurant’s successful balance of tradition and modern finesse.
