
Madara, which opened in mid-2025, is the new Japanese craft-cocktail bar from Rayven Leung, founding bartender of the nearby Takumi Mixology Salon. This time, Leung expands, and improves on the same Ginza-style foundation – precise, subtle and minimalist bartending – with inspirations drawn from fresh fruit, Japanese tea and even Shakespeare. Leung’s mastery of tea is exemplified by The Bancha & Chestnut Alexander, which focuses on bancha – green tea leaves harvested at a more mature stage than sencha. The drink combines that with mugi shochu, cognac, matcha, adzuki liqueur and cream to evoke the roasted fragrance of chestnuts. Shakespeare inspires the Rose By Any Other Name, a nod to Juliet’s famous adage questioning family names. The cocktail pairs Wa Bi Gin Damask Rose with Liqueur De The Jossie Mate and fresh Japanese strawberries, delivering a perfectly sweet yet punchy profile.
