
Among the top Cantonese restaurants anywhere in the world – one of just four to hold three Michelin stars – Jade Dragon is a crown jewel of Macau’s fine dining scene. Director of culinary Kelvin Au Yeung, a Hong Kong native with over 30 years of experience, has been with Jade Dragon since its opening in 2012. His culinary philosophy centres on the Cantonese principle of “when in season, eat”. That means chefs here work with organic and seasonal ingredients imported from high-quality locations around the world. The menu is extensive, with pages dedicated to abalone and fish maw, live seafood and items from its speciality lychee wood barbecue. Staff are also proud of their seasonal healing soups made in collaboration with local Chinese medicine practitioners – worth considering should you want something especially nourishing or particularly flavoursome.
