
Grissini carries forward more than three decades of Italian fine-dining tradition at Grand Hyatt Hong Kong. The restaurant channels the sunny, coastal flavours of Naples and southern Italy in a relaxed and unpretentious dining room with sweeping Victoria Harbour views. Chef de cuisine Valerio Giuseppe Mandile, born and raised in Naples, highlights premium ingredients such as Amalfi lemons, Puglia seafood and regional cheeses, then puts them to use via clean, ingredient-led technique in dishes like crudo di gamberi blu (blue prawn crudo), trenette al nero (squid‑ink trenette with clams and zucchini) and the house tiramisu all’Amaretto. The restaurant’s own grissini – freshly baked breadsticks – reflect its philosophy of doing simple things exceptionally well.
