
Founded by veterans of respected bars Penicillin, Lockdown and Tell Camellia, Courtroom opened in SoHo in late 2024 with high expectations given co-founders Saan Dhakal and Ranjit Khatri’s experience. The results at this spot on the steep slopes of Graham Street haven’t disappointed. The menu features an array of drinks – replete with legal names – with flavours that are complex yet playful. The Alimony is based on the martini but uses a house-made rose petal and rosebud vinegar to add some character instead of the traditional vermouth. The To The Trial puts Courtroom’s experimental chops on full display, building on a fully in-house made guava and mango wine, and finished with fennel distillate and clarified citrus. Few bars in Hong Kong pull off this sort of technical mixology while producing such genuinely appealing flavours.
