
Bar Leone may have one-upped Coa’s record of topping Asia’s 50 Best Bars three years in a row by taking the global top spot – but Jay Khan’s agave-focused concept still has long queues, especially after refreshes to interiors and menu. Khan and his team work tirelessly to ensure that the sizeable volume of drinks they serve doesn’t impact quality. Cocktails continue to combine local ingredients with agave spirits to stunning effect, such as the Bitter Melon Collins, combining winter bitter melon, tequila, coconut, green curry, blood orange and elderflower tonic. Classics remain too, however, such as the Mole Negroni which focuses on flavour from cacao husks, vermouth, Campari, tequila reposado and finished with ancho verde liqueur which imbues flavours from poblano peppers.
