
The wave sculpture stretching the length of Chao Yue’s ceiling mirrors the venue’s name, which means “jumping waves” in Chinese – a phrase that also evokes the leaps and bounds chef Han Yang takes in reinterpreting Chiu Chow culinary customs and practices. Incorporating elements of Chaoshan culture, the three prix fixe menus offer diners an intimate experience, with each course telling a story that connects to a broader throughline of fine Chaozhou cuisine. Tailored service takes centre stage, reflected in Han’s 2023 Michelin Guangzhou Service Award. His visionary dishes include a trio of marinated shrimp, Kandong sea cucumber and king crab noodles; and a marinated goose platter.
