
Caprice Bar is a particularly rare proposition in Hong Kong. Were the bar separate from its accompanying three-Michelin-starred restaurant, both would still be outstanding in their own right. Under bar manager Anyss Saintilan, the bar launched the Elements cocktail menu in mid-2025, a collection of nine drinks inspired by textures and elements found in nature, each presented in its own interactive display box. The menu builds in flavour gradually, from the light, saffron-infused Flower to the powerful, duck fat-washed Feather, which pays homage to France’s foie gras region. The Water leans heavily into latent marine and saline flavours from infusing elderflower liqueur with oyster leaf before finishing the drink with champagne and soda water.
