
It feels like yesterday that Argo opened to replace the Four Seasons’ Blue Bar and, while much has already changed here, the same high standards and cutting-edge mixology remain. Jonathan Gabbay succeeded Federico Balzarini as beverage manager in November, and his first big move was to launch the Argo Exploration menu. Though it sees the bar step away from the intense lab-based innovation of previous menus, it continues to offer innovative, locally inspired drinks that are balanced and precise in their execution. The drinks are a collaborative effort with local brands – witness the Morning Bite cocktail, which uses banana jam from LoCoFarms – or bring refined interpretations of local flavours, like the Pickled G&T inspired by Hong Kong’s pickled kale.
