
Amber stands as Hong Kong’s pre-eminent modern French restaurant, finally elevated to three Michelin stars in 2025 in a long-overdue evaluation. The already legendary restaurant continues to offer contemporary French cooking shaped by local ingredients and dietary adaptability. The kitchen works with sustainable produce – heirloom vegetables and responsibly sourced seafood – while maintaining culinary director Richard Ekkebus’s novel approach that avoids dairy, refined sugar and gluten across much of the menu.
