Probably more than any other hotel group, St. Regis likes to emphasise its bar offerings. The group trumpets the fact that since its opening in 1904, the St. Regis New York has enjoyed a reputation as a social epicentre for discerning guests in the heart of Manhattan, courtesy of the hotel’s famous King Cole Bar. It’s unsurprising then that standards at the Hong Kong outpost are high and among the best in the city. The bar menu is full of appealing local touches, whether it’s in the names of drinks, their inspiration or the ingredients. In many cases it’s all three. Take Bremer’s Tea, named after Captain James Bremer who first set foot on the old crossroads of Possession Street and Queen’s Road Central, and which features a refreshing concoction of calamansi cordial and osmanthus-oolong tea kombucha as nods to local cha chaan teng flavours, alongside local NIP gin, Mancino Bianco Ambrato vermouth and verjus.
