When The Savory Project opened in 2023, expectations were sky high. Here was a new concept from Ajit Gurung and Jay Khan who were in the middle of winning numerous awards and plaudits for their work at Coa. The focus on savoury cocktails, something relatively unusual in Hong Kong at the time, was intriguing and added to the hype. The result, when it came, did not disappoint. The Thai Beef Salad, in particular, arrived as an instant classic, a drink that everyone needed to try at least once. The meticulous R&D that Gurung and Khan engage in before any drink makes the menu at Savory Project ensures consistent quality. The focus on savoury flavours means the establishment may not be to everyone’s taste – no florescent, sickly sweet 80s-style libations here – but for those that “get” it, it’s sure to be a favourite.
