Any new Italian restaurant in Hong Kong enters a fiercely competitive marketplace, whether a modest pasta bar or high-end fine dining establishment. Testina, upon opening in 2022, promised “a fresh take on Italian cuisine” and so it proved with its focus on meat and offal. That last part comes courtesy of Trippa Milano, the celebrated Milanese restaurant, famous for its nose-to-tail ethos, who have partnered with Testina on this venture. A look at the menu demonstrates this with entries like fried honeycomb beef tripe, baby lamb belly “Porchetta style” and pig’s head with salsa verde. These often-unwanted cuts are transformed into rustic winners with painstaking preparation. The less adventurous dishes are equally worthy of your time, whether the charcoal grilled bone marrow or the home-made tagliatelle with duck ragu.
