Foco is an odd building with an odd assortment of restaurants, many of which are unremarkable. One that is completely the opposite is the outstanding Sushi Fujimoto, brainchild of chef-owner Kenichi Fujimoto, a veteran of the Michelin-starred Sushi Saito. Fujimoto champions “the art of simplicity”, rejecting the notion that fine dining requires ever-increasing complexity and molecular craftwork. His Edomae sushi showcases this philosophy, allowing the inherent flavours of each premium ingredient to shine through with minimal seasoning. Fujimoto’s culinary approach is irrefutable evidence that less can be more.
