Its 19-metre-high domed windows and dazzling 130,000-crystal chandelier create an atmosphere as breathtaking as the cuisine. Executive Chef Julien Tongourian upholds the restaurant’s exacting standards, maintaining its impressive 14-year streak of three Michelin stars. The superb gastronomic experience stems from a meticulously curated menu, originally conceived by the late Joël Robuchon and now masterfully executed by Tongourian. While caviar is a highlight that graces the menu more than once, it’s not the sole focus. This culinary journey tantalises taste buds with an emphasis on quality and seasonality, proving that exceptional flavours don’t always require extravagant ingredients.
