Argentinian-born Italian chef Paulo Airaudo, renowned for acclaimed restaurants worldwide, including the two-Michelin-starred Amelia in San Sebastian and Anima in Bogotá, brings his playful spirit to Noi. Airaudo seeks to “put the fun in fine dining”, evident in the restaurant’s vibrant ambience inspired by his tattoos and favourite video games, accompanied by a nostalgic soundtrack of 90s hits. He and head chef Luigi Troiano build Noi’s innovative set menus, dubbed “Italian omakase”, showcasing a captivating fusion of seasonal Italian and Japanese ingredients. Recent menus have included the likes of pasta alla chitarra, with French Amelié oyster and vin jaune, and Sicilian tuna kamatoro, Hokkaido red uni and “Kaviari” Kristal caviar. For those seeking an indulgent culinary adventure, the Japanese A5 Wagyu and roasted blue lobster are exceptional and well worth the splurge.
