Argentinian-born Italian chef Paulo Airaudo, renowned for acclaimed restaurants worldwide, including the two-Michelin-starred Amelia in San Sebastian and Anima in Bogotá, brings his playful spirit to Noi. Airaudo seeks to “put the fun in fine dining”, evident in the restaurant’s vibrant ambience inspired by his tattoos and favourite video games, accompanied by a nostalgic soundtrack of 90s hits. He and head chef Luigi Troiano build Noi’s innovative set menus, dubbed “Italian omakase”, showcasing a captivating fusion of seasonal Italian and Japanese ingredients.
