Wynn Palace’s premier Japanese restaurant was revitalised last year with a spectacular renovation centred around three Japanese koi that represent good luck, prosperity and good fortune. Elsewhere the space is made inviting via golden-hued wood and Japanese kintsugi ceramics.Executive chef Hironori Maeda began his career working for Kyoto’s Michelin-three-star Kitcho Arashiyama Honten restaurant, a place famed for its exceptional kaiseki cuisine. Maeda brings his decade of experience there to his work in Macau, offering a range of dishes across sushi, tempura and teppanyaki counters. The chef’s own signature dishes are first-rate, particularly those cooked on the traditional binchotan charcoal grill, such as the fabulous grilled eel with sansho miso and the grilled crispy rosy sea bass.
