All good cooking looks to make use of fresh seasonal ingredients, but Jade Dragon takes things to the next level. Here, chefs work with organic meats, vegetables and herbs, as well as directly imported seafood from top-notch locations around the world. The menu is extensive, with pages dedicated to abalone and fish maw, live seafood and items from its speciality lychee wood barbecue, as well as the more expected meat and vegetable options. Staff also trumpet their seasonal healing soups made in collaboration with local Chinese medicine practitioners.
