Founded by veterans of respected bars Penicillin, Lockdown and Tell Camellia, Courtroom opened in SoHo with high expectations given co-founders Saan Dhakal and Ranjeet Khatri’s experience. The results at this spot on the steep slopes of Graham Street haven’t disappointed. The opening menu has produced an array of drinks – replete with legal names – with flavours that are complex yet playful. The Alimony is based on the martini but utilises a house-made rose petal and rosebud vinegar to add some character instead of the traditional vermouth. The Conditional Discharge, at the crossroads of a sour and a milk punch, is a umami bomb courtesy of clarified tomato and basil, Parmigiano Reggiano and spicy salami distillates, and a distilled pizza dough tequila. Few bars in Hong Kong pull off this sort of technical mixology with such success and genuinely appealing flavours.
