Jay Khan’s agave-focused cocktail concept was finally toppled from the summit of Asia’s 50 Best Bars last year after a historic three-year reign. Khan’s modest ego is unlikely to be too wounded by the new rankings and for the rest of us, with the long queues and wait-lists having transferred to Bar Leone, the upside has been that Coa is more accessible than it has been in some time. Khan and his team work tirelessly to ensure that the influx of customers and the still sizeable volume of drinks they serve don’t impact quality. Coa’s cocktails continue to combine local ingredients with agave spirits to stunning effect, such as in the Tranquil Garden (jasmine, matcha, Muscat grape, soy milk, pickled cabbage, tequila) or the Smacked Cucumber (cucumber, Chinese salad, milk-washed tequila and mescal).
