It feels like just yesterday when Argo opened to replace the Four Seasons’ Blue Bar and while much has already changed here, the same high standards and cutting-edge mixology remain. Federico Balzarini, as beverage manager at the Four Seasons, leads the team. Their latest creation is Combinations, a new menu that showcases “a dynamic exploration of artfully blended single ingredients” that range from pineapple to corn, and hops to wood. The same ingredient might take various forms. Wood, for instance, is represented at one point by cinnamon but is also featured in techniques such as smoking or ageing. Combinations is a complex menu, that stretches from one key element to four in any given cocktail. The results are always engaging and demonstrate how a single ingredient can shine alongside complementary components.
