Arbor is the creation of Eric Räty, and one of Hong Kong’s most prominent establishments championing Nordic cuisine. Here, the Finnish chef-owner unites exceptional seasonal ingredients with the refined simplicity characteristic of premier Scandinavian and Japanese dining. This simplicity extends to minimalism in the menu’s presentation. Most dishes are denoted by single words – for instance, “citrus” or “buri” – lending an air of the unexpected to the proceedings. Whatever their enigmatic name, Räty’s compositions – such as the South African abalone served atop house-made green tea ramen – consistently deliver distinct, vibrant flavours that invigorate the palate.
