Arguably the most important Western restaurant to open in Hong Kong this century, Amber continues to wow after more than 15 years in operation, delivering modern French cuisine that is inventive without being unapproachable. The standards of culinary director Richard Ekkebus remain of the highest order and his pivoting of Amber towards gluten-free, low salt, low sugar, low diary and more sustainable dishes remains one of the most impressive culinary reinventions in the city in memory. Amber has been so good for so long that its excellence is almost taken for granted. Each dish is wonderful and the consistency across the restaurant’s wide array of options is truly impressive.
